This is very easy, quick, and tasty
you need
- Some fillets - I use Snapper
- a packet of Fajita Seasoning. I use Old El Paso Fajita mix from the Supermarket - about $2 a packet Its the Yellow packet stuff that passes for mexican in most supermarkets.
- a tomato (diced)
- Some coriander if you're flashy.
- Some wraps. The big "Farrah" wraps are good.
Coat the fish in the fajita mix
Get a big frypan going hot - I use a cast iron pan, hot (not crazy hot, you dont want a oil fire)
chuck in some oil - rice bran oil is good (high smoke point)
lay in the seasoned fillets, when they're cooked half way through (only a few minutes) flip them and chuck in the diced tomato
Cook them through then remove from heat and throw in the coriander leaves and serve quickly while the whole lot is sizzling hot
just grab some onto a wrap and you're away. You can have all sorts of other things on the table - shredded lettuce, grated cheese, finely diced onion, sour cream, whatever you like
but its just good from the pan.
Quick, easy and tasty - and good for any fish thats been sitting for a few days too
