In my opinion there are two important things that you can do to make fritter great! 1st being shell the tuatua�s live and them through a mincer or blender. The second is whipping the egg whites.

You can use this recipe for any shell fish or any other type of fritter.

 

Ingredients

 

500g tuatua meat

2 eggs

1 teaspoon freshly grated ginger

1 clove of garlic

1 chilli

Small handful of coriander leaves chopped finely

Zest/rind of 1 lime

 

Prepare the tuatua meat. Separate the egg whites and yokes. Mix all the ingrediant together except the egg whites. Wisk the egg whites until the form peaks or stiff, you�ll wear ya bl****y arms out doing this but it makes the fritter light and fluffier.

Gently fold the egg whites through the rest of the mixture just enough to mix, be very gentle doing this or you will destroy all your hard work.
