Most authorities seem to agree that hanging larger game birds such as pheasants for few days, certainly improves flavour. Temperature somewhere in the upper 50's 'F.
Should I do the same within Wood Pigeon? As a smaller bird, would they be better eaten immediately or hung for a few days? If better hung, would the temperature inside my jacket be alright or a bit too warm?

Wood pigeon is best if flown the length of the country - the flight softens the meat I've heard Evil Smile.

Sonny, I suggest you conceal them internally, they will be perfectly cooked by the time you get back home.

I understood the the old school pre chillers and fridges etc.. where gutted and hung under the 'chin' in a windy spot, to prevent flys, till the head and body separated.

Not much different to poachers a little further back in time
But we are PC civilised these days and both of these would be considered unhealthy actions.
Wood pigeon has a large fat content.. more like geese than pheasant and ?I think they where treated a little different... not sure about the goose poachers thu...

What Im having trouble with... is wood pigeon is a large bird....to conceal 1 under a coat would be pushing , but conceal 5.. at an air port?  surely that alone has to be a entry into the Darwin awards?

I also understand there have been a few resent rather sever sentences in resent past for poaching wood pigeon up north...but this court appearance is down south...so just wonder how the consistency in sentencing will go?

I thought there was also a rahui on them up North, which is maybe why he flew South!

Did anyone here the news today newstalk zb 2.00pm/that mpi have issued health warnings about eating wild birds?they mentioned eating Kereru,are kereru not protected?

Heres the link to MPI website - not sure about wood pigeon as such - seems to be a warning on here about eating wild animals in general - after all they haven't been farmed or inspected!
