I no you are all asking your self what is a Fattie ShockedConfused
Well I asked myself that same question, when I was looking through the Forum on the Bradley sight ( USA ) as this is what they call them.
So I asked the Question how do iI make them and this is what i got back
 
 
Well here is my take on a Fattie This is the items I will need for the job
 
 
So I mixed 1kg of mince in a bowl with some seasoning and 1/2tsp cure I then divided the mince in 2 so I could make 2 Fatties. 1 to go in the freezer for later.
Roll your mince out on glad wrap as show en and spread your favorite sauce on.
1 was done with BBQ Sauce and the other one was Sweet Chile Sauce.
 
 
Now you can start with your topping any thing you like.
I did like a Pizza topping Onion,Spaghetti,Sweet Corn,mushroom & Salami
 
 
Time to top it all with cheese
 
 
After I had rolled it all up It was placed on a weave of streaky bacon and rolled.Wrapped in glad wrap and put in the fridge for the night to set
 
 
 
 
Now it is time for Fattie to meet Bradley.open wide and say Ah LOLLOLLOLLOLLOL
 
 
Preheat to 121°C (250°F) I smoked for 2hrs using Hickory carry on cooking until the IT reaches 71°C (160°F)
 
 
Now the money shot.
This is some thing I will do again for sure because DAM it was so GOOD TongueTongue

I chucked the mince (1kg) in a bowl, poured in a bit of extra hot chailly sacue, some bbq sauce and a bit of soy sauce. Mixed it up, flattened it out  then added a bit of tomatoe paste, diced onion, spaghetti, mushrooms, cheese and pastrami. Couldnt get the bacon to stretch around the ends, used the whole packet on the sides! Will let you know how it turns out.

You just need to make sure you plug the ends well.As I found out alot of my cheese came out Cry
But hay thats what learning is all about trying new things Big smile
 
They say don't let the IT get any higher than 160F you don't wont it to dry out or after you have smoked it .Wrap it in tin foil and cook that will keep it nice and moist
Let me no how you get on
 
A guy in the States puts veges in his like Cabbage,beans,peppers etc that will also stops it from drying out
I am going to try the veges one next time
