I used to cook Sea Bass in the UK this way and it works great with snapper.
 
Score the skin of a snapper and place on tin foil.
 
Add : 
 
Small tomato's, Slice and add onion, peppers, mushroms. chilli, ginger and lemon. And anything else that takes your fancy.
The ingredients should be placed below, inside and on top of the fish. Throw in a sprig of rosemary.
Fold the foil into a package and pour in a slug of white wine.
Seal the package well.
Throw it in a hot oven or bbq for about 20 mins.
Just before cooked open the package (get a load of the aroma) and put in a few mussels. Reseal and cook for another couple of minutes.
 
Enjoy
 
Have some fresh bread ready to dip in the juices.
