Very artistic presentation Kitno, top msrks.
You guys are certainly dragging me back to thinking crumb or batter is best.. chippies look good too, and salad a very nice touch and the perfect palate cleanser in between mouthfuls of fish and chips.

Hey Muppet, I tried your mix today, it was good, but not quite like fish and chip shop batter. I used very hot oil. Maybe the batter mix should be a bit thinner. Any thoughts?

Try Baking Soda instead of Powder... I have found it helps to make a more fluffy batter... add a good dollop of lager also...

MB, the batter I used on the fish in my pic above is just self-raising flour and cold lager - no specific measure, probably half a cup of the flour and 1/3 to 1/2 of a bottle of beer whisked together. It should be quite runny. I dust the fish in self-raising flour, then into the batter mix and use tongs to place into the hot Canola oil. I use a wok so you can achieve depth quite easily.

I think fish and chip shop batter is probably just flour and baking powder with some cheap bulk soda water. Obviously they use a big commercial fryer and have the temperature really cranking.

Very nice telecaster and alanl... love Mahi Mahi.
Wife crumbed fish tonight and  oiled fish/ snapper first, then crumbed it and grilled it in oven. Stuck surprising well. Tortillas are farrahs brand, crisped in a dry no oil pan.

Thanks for the extra tips on battering, I will try them. It's something I've never got quite right. Results so far have been acceptable, but not god tier.
