Smoked Chicken with Alabama White Barbecue Sauce

A finishing baste of white barbecue sauce embeds a deep tangy character into the meat that makes this chicken something special.

·         1 Cup Apple Cider Vinegar

·         ½ Cup Apple Juice

·         2 tsp grated Horseradish

·         1 tsp Kosher salt

·         ½ tsp Mustard Powder

·         ½ tsp Cayenne Pepper

For the Brine

·         1 Litre Apple Juice

·         1 Litre Water

·         ½ Cup Kosher Salt

·         ¼ Cup Brown Sugar
