Sure looks like you're enjoying the fruits of your endeavours Lonely but that's all a bit brutal by our standards.
Have you never heard of the Japanese method of humane dispatch?
It's called IkiJime~~saves the fish from trying to live on without scales or innards.

Also, I'm curious as to what happens to the bones that get spat out on the grass.

Son came across this when in the highlands of PNG and remote islands in the Solomons using local labour.
 He spent quite long periods away from civilization back then.

We had a small grove of very large diameter bamboo at our last place. so he packed and cooked up several meals... mixture of rice, fish , meat.
 If it had more herbs spices would have been far nicer thu the texture could have been better.
The locals would bring to 'work' then throw in the fire to re heat.
