Honest question as I was bought up in Northland and we never kept SP, even the larger models.

When I went to New Plymouth and southwards... I learnt that Sea Perch was a favoured fish to keep and eat and even weigh at their fishing clubs competitions... they were also known as Jimmy Canyon and South Island name; Jock Stewart.

They are a good livey bait for Hapuku and Bass also.

I would say even more tasteless than snapper. That's not a criticism, just an observation. Most people seem to prefer fish that doesn't taste of anything much. 

It's interesting because one of the YouTubers that I watch is based in California. He fishes for cabezon which isn't very different from our sea perch. They are highly regarded as an eating species over there.

We have more; Eye Brow, Orange Perches and more that I would need to get the book out.

When in Singapore we caught lots of a similar looking favourite of theirs. We gutted and gilled and it was battered and quickly deep fried and then presented with a fantastic chilli sauce. We literally chomped threw crunchy bone, tail, fins, head with only the Otolith (Ear) bones to discard out...Fantastic flavour and taste... this is why Asians love small fish... and don't understand our rules in NZ.

Very cool, is it very rich/heavy as Salmon can be sometimes.

Muppet, i hold you to the kingfish belly picture in the earliest/first opportunity;)

Catchelot, you are right, it was guacamole like filling.
Following the video recipe i've mix avocado with cream fraiche and realize that thing going to be VERY rich, to rich to are liking.
That's why i've add onion, spring onion & some fresh chilly+spices, guacamole like flavour. 
It was still very rich.
Next time i'll make the dome half the size, cos according to my wife it's "hart stopping dish"  
Last thing, after making this dish do refrigerate for an hour or so to hold the shape & infuse all the ingredients.
