Thanks PCJ for sharing. Pork butt is a long cook, maybe sometime in near future i'll post some tips how to get most of the pork butt ;)

I am thinking cooler and slower,read to leave vent 1/2 open,wrapping in foil last 2 hrs helped.

RockCrashing have done a rolled beef??Thinking next Friday??

No i'vent done rolled beef. Marinating 3kg of pork belly=maple&time bacon. GL with your upcoming cook ;)

I forgot, today i'll be doing very short smoke.
Little over 1kg pork belly, been sitting in the refrigerator for 3 days marinated, with the skin dry like a bone.
Chinese crispy pork belly, known as a Siu Yuk - Sio Bak. Last chance before the rain on Tuesday.

one of the results of the last weeks cooking / smoking. forgot to take photo of pork an brisket . hopefully photo works ! tasted great , used a lite coat of mollassis just before putting in barrel smoker.

Its just one of the cheap charcoal ones =I think from save barn , really happy with the way it performs. dose a pork sholder in bout 8 hrs at 75c and brisket in 12 hrs at same temp . i use apple and manuka from trees i cut and cherry chunks from flaming fires .

Well the chicken been going for 1 1/2 hrs just added potato/kura in foil to coals and bottom rack placed Kandrew s pumkin in ,filled garlic/onion/brie/cream so thinking turn chicken over now and give a further 1 1/2 hrs,tried a bit thats cooked and yep spice coming through nicely..

Will post when cooked.

Well folks the potato /kumara cooked Kandrews pumpkin,Truckme why oh why have i not done it before.
The chicken with my compromise tandori excellent no complaints from family. This time I heated coals in M10 chinney so starter fluid could burn off.    Family wants it again with maan bread,yeah well about that you lot can make it.Thanks Kandrew for pumpkin and Rockcrashingh fr geting me involved Barrel smoking.

Might have to go buy a pumpkin tomorrow and have a cook up, haven’t done the pumpkin like that for a while.

Got a leg of pork in the barrel,been going since 10.00am.Hmm me thinks 10.00pm we might have dinner,potatos/kumara/pumpkin in foil about to to go on.6hrs now so will put pork in foil.Just checked and yeah maybe late dinner smells divine,so far 5kg of hickory bricks in ,little smoke and heat at 75c.

Got stout what more can I ask for??

Damn! All I have is a 15lb snapper in my old styles fish smoker Big smile. I really must get me one of those things PCJ. I think I'd get an offset wood smoker. I was at a mates the other day and he had a brisket on an Oklahoma Joe. It was amazing.

Finally got the end leg out at 9.30,so 11.5hr cook, taste was a combination between a ham and a roast. Came apart like a pulled pork. Nice and juicy and in trouble as the juice dripped on her polished floor.







The skin was rubber like but not disappointed in anyway. slightly over cooked veges,maube a hr max sitting in embers.

Sunday done 4kg of tandoori chicken, on Friday marinated boneless chicken thighs overnight in garlic paste, lime & salt and on Saturday in yogurt & spices, also overnight.   
The barrel is ideal for this type of grilling, luv it. Cooking time only 40min, fast & hot.

And we are under way with a smoking chicken soaked in a honey glaze/potato/pumpkin/kumara/onios in foil,maybe a side greens with a garlic bread and Hmm ouzo or a nice white?
