Worth having a look at a Synit TopShot 71 XH, its only 7'1" which would be perfect for a jetski.

I would suggest the new JM Monster 80 rod for stick bait.  Max lure is 115g. 
 
As Falco warns - Kings fight straight up and down and you will need to drive away alittle to put angle to the fish otherwise you have an unhealthy high stick situation.

(i have a jetski also, and a boat) I am not sure if i would bother stickbaiting off a jetski, you and your rod will end up in the water if you hook into anything decent you need to be able to drive the ski. If you do decide this is for you then make sure you AND THE ROD are harnessed into the ski....i often find myself wedged into the corner of my boat fighting these fish they are brutal and with a $200 plus lure on the end of the rod you need to lock and load so running far more drag than you may normally use with a jig if targeting them over reefs etc.

There are alot out there,some of the commercially made 'off the shelf' GT rods may not be suitable for our kingifsh particularly from a Jetski.
Kingies love to play straight up and down,hooking them on the surface and then having them go deep can catch an angler out.
My recommendation would be a forgiving rod that folds away nicley under load,anything else may end up broken if you cannot manouvre yourself/ski fast enough.
