They deep fry them, I tried some the other night, not too bad, bit of a novelty for the kids.</P><P>Just make a diag&#111;nal cut through the fish from immediately behind the head to the anal fin so that the entire gut cavity is removed, nice and clean and no mess.</P><P>Then you just wash, dry and deep fry them until the skin goes crispy. Works with other small fish as well. You can then eat them b&#111;nes and all!</P>]]>
