Serves 2-4
1) Preheat the oven to 200 degrees.
2) Melt the butter in a medium saucepan, add the onions and celery salt and cook for approx five minutes until the onions are opaque. Remove from the heat.
3) Add the remaining ingredients and stir to combine. If the mixture is too dry, add a little more sour cream.
4) Pat dry your fillets and place each fish fillet on a piece of tin foil. Season with salt and pepper and spoon over the sour cream mixture to completely cover the fish. Wrap each fillet tightly with the foil and bake for approx 25-30 minutes or until the fish is cooked through. The cooking time will vary depending on the thickness of your fillets.
5) Serve with a parsnip garlic puree and roasted tomatoes. ENJOY!
