Kingfish with Chorizo Sauce

Serves 4

Ingredients

• 4 Kingfish steaks, snapper will work well too

• 1 Tbsp olive oil

• 2 cloves garlic, sliced

• 8 slices of chorizo cut into matchsticks

• Pinch dried chilli flakes

• Pinch of dried oregano or mixed herbs

• 1 can diced tomatoes

• Greens and rice to serve

Method

1) In a small frying pan on medium heat, add the olive oil and cook the garlic and chorizo for one minute. Add the dried chilli, herbs and tomatoes and simmer for 10 minutes until thickened. Season with salt and pepper to taste and set aside.

2) Set your oven to grill. Pat-dry the fish fillets and season with salt and pepper.

3) Line an oven tray with baking paper and place your fish fillets in the middle of the oven to grill for 4-6 minutes, or until the fish is opaque and cooked through. Don’t place the oven rack too high though, or it will burn. Cooking time will vary depending on the thickness of your fillet.

4) Place your fish on a plate and top with the chorizo sauce and a side of fresh greens and rice. ENJOY!
