Advice & Info: Pan fried flounder with creole seasoning

1-2 flounder
200grm flour
2-3 tbsp clarified butter
Olivado lemon infused avocado oil
Micro salad greens.
Lemon cheeks for garnish

For the seasoning

2 1/2 tablespoons paprika
2 tablespoons Masterfoods  sea salt
2 tablespoons Masterfoods garlic powder
1 tablespoon Masterfoods freshly ground black pepper
1 tablespoon Masterfoods onion powder
1 tablespoon Masterfoods cayenne pepper
1 tablespoon Masterfoods dried leaf oregano
1 tablespoon Masterfoods dried thyme

Place all ingredients in a airtight jar and shake to combine. This will keep for at least a couple of months in a pantry.

Method

Place 2x tsp of the seasoning mixture into the flour and stir to combine.

Next dredge the flounder through the flour then place into a preheated pan of clarified butter with lemon oil to cook until golden on each side.

Turn out and serve with lemon cheeks and micro salad greens on the side.
