2x tbsp grated or crushed ginger.
2x tsp sea salt
1.5 kg snapper, Tarakihi, Blue cod.
3x tbsp Kikkoman or light soy sauce.
1 _ tsp sugar
1x tbsp white vinegar
2x tbsp cooking oil (Olivado Extra virgin Avocado oil)
2-3 rashers bacon
3-4 shitake mushrooms soaked and stalk removed sliced
4x spring onion (cut angle lengthwise)
Methods
Mix together the chopped ginger and salt then rub all over the fish. inside and out.
Set aside 30 minutes.
Mix together the soy sauce, sugar, vinegar and oil in a bowl, pour over the fish then set aside again for 15 minutes
Place the fish on an oval heatproof dish and pour over the marinade.
Sprinkle with shredded bacon, mushroom and spring onion.
Place the dish into a steamer over boiling water and steam vigorously for 12 or so minutes.
