Freezing Fish Fillets

Place the fresh fillets onto an aluminium baking tray and slip into the freezer for two hours.

Remove when frozen by bending the tray or run warm water over the back.

Place into clear type Supermarket bags and suck out excess air, seal the bag and wrap in newspaper to extend the life of fillets.
