Most anglers prefer to use a 5/6 in those types of situations, however a seven can be used and especially so in the early part of the season you plan to be here before the real low water/spooky fish conditions set in.

If you line your rods with sevens you should be ok and in the Taupo/Rotorua areas many of the techniques are similar to single handed salmon techniques and your existing tackle will be ideal.

However, if you can afford it I would recommend getting a 5/6 weight to add to your arsenal, if not putting the sevens on your existing gear will be a workable compromise.

Hry Yorky - I'm no tackle freak but I have 3 outfits.
4-5 for small stream/dry
6/7 for larger water (including the smaller streams with clearing water, after a spate).
8 - for lakes and Taupo/Rotorua
None of these are top-shelf outfits but work well.
Be yourself; everyone else is already taken
