Kingfish and hapuka vindaloo on home made chips

Yum yum yum.........Bloody hot too.
cut pieces of fish into cubes
place in plastic bag with vindaloo paste from indian shop.....
add curry powder/rough chilli with seeds......salt/pepper and some coconut milk.....some ginger and some garlic.....small amount of cumin........chop up whole hot chillis to heat requirements ......i was famous in wales for eating the hottest going......so i like evil hot.......some white wine vinegar.
some habanero tabasco sauce! ......not for the faint hearted.....small amount of rice bran oil........some full cream....chop some mushrooms and some potatoe into quarters(boil separate until fork can just pass through/drain and add to curry) .
Swish around in bag and place in fridge over night......
The next day it will smell delightful LOL
Cook in pot on medium heat until fish is cooked....stir often.
Eat now with either rice or chips........it will taste even better if left to the following day.
Best fish= kingfish/hapuka/KY........15+ pound snappers.
seek out hot vindaloo paste from indian shop....its worth it.

curry and chips is a bit of a british number........hard to beat....especially after a night out on the town!
