I'm interested in both salt and fresh water fishing methods.
Just want to know what methods you guys are using to compare to the fishing we do in Scandinavia.

In that case, we use pretty much everything you can think of, it all depends on locale and species.

That raises a question monsterbishi. Is there anywhere in New Zealand we ice fish? I'd be interested to know. Maybe somewhere in the Deep South? I've never heard of it here though?

Hi Jens mechanical jigging, slow pitch jigging for palegics such as King Fish, Snapper etc has become very popular over here recently. Perhaps not to the same extent but top water lure fishing with Stick Baits is also becoming very popular.
What do fishos do in Sweden to target big fish?

Number one fishing method....bait fishing. Casting off beaches or rocks, using skipjack tuna, squid or pilchards for bait. Off boats, mostly either two hook ledger or paternoster rigs with cubes of pilchard, squid or skipjack (also called bonito here), or using running sinker rigs with the same baits, often the latter being cast from anchored boats into shallower, rocky areas for fish like snapper.
Trolling, this will catch you a local species called kahawai, these fish are fun to catch on lighter tackle, the jump, run fast, good value, and are DUMB..., they will bite anything moving thru the water, so no need for flash lures for them, whatever you would use for trout or salmon will work just fine for them.
For larger fish like kingfish, live baits work very well, as does jigging or poppering.
Fresh water....here that really means trout.
Fly fishing for trout, works as well here as anywhere in the world.
Spin fishing, casting lures also as effective, just be award however that on some lakes and rivers there are definite fly fishing only areas, especially in the rotorua and taupo areas. Trout spinning lures....generally small metal lures like Tobies or Z spinners are the basic lures, as well as Cobras, banana shaped plastic lures are very effective.
Small rapala style lures are also extremely effective.

Apart from bait fishing, softbaiting is also very popular, both in Saltwater, and in fresh where allowed. 

Spear fishing is also used for flatfish, and with scuba gear in the salt. 

What you don't often see is pole fishing for coarse fish.
