Hey all,

I enjoy eating Kina but was wondering what we do with them past just opening and eating the roe?

Brother in laws recipe is great:

Kina roe
Lemon juice
Finely chopped red onion
Chopped coriander

Mix together and leave for a bit for the lemon juice to do its thing then enjoy.

I guess Kina pate would also work?

Kina with kingfish carpaccio.

Serve on chillied or garlic bruschetta with an avocado slice and sprigs of greens.

Just coming back to this post again, another cracker is having Margarita shooters with your kina.
Did this on a trip couple of years back to 3 Kings.
That extra salt shot is just what the body needs after a day of fishing.

gently fried in butter, goes firm like pate, then spread on vogels etc. delicious.

^ I've not tried that, but will. 

I've smoked it once and I think it has potential. I sugared and salted it, but the sugar was a mistake. I can imagine salted and smoked kina roe fried up might be a wonderful man's breakfast (accompanied with eggs, onions, bacon, black pudding and a beer). Give it a go Justin and tell us how terrible/awesome it was!
