Cut out the blood lines and get 2 loin strips per side. Cut into medallions and sear on each side.....marinade in a soy/garlic/ginger/chillie/lemon/oil mix and bbq - delicious!
Be yourself; everyone else is already taken

A while back When we got one...Iked it...Iced it down straight away in a slurry...cleaned it up and tryed it raw.
VERY AVERAGE!,Cant see it being any better than that as we could not have treated it any better.

Roy you obviously dont like the taste of fish with all that cr@p on itLOL

Back when I was commercial fishing in the early eighties in Fiji, one of the fijian crew did some fresh skipjack up into cubes and marinated in soy sauce, wasnt too bad actually but still prefer it as snapper bait.

Have been known to 'divert' the odd fresh-caught skippie.  If they do the drum dance, probably not worth the trouble unless they go straight into a salt ice slurry, that's the only way to handle these little buggers.

Ice down for at least four hours then lemon juice, black bean sauce and wasabi.  Almost as good as YFT, up there with BFT in my experience and much easier to handle package sizes Clown.

I slabbed the side of one for bait then turfed it back into the slurry and promptly forgot about it.  I turned around when we got back into the marina and the neighbour in the next berth was placing the opposite side into his smoker WTF?????

But, the thing was damn good, best tasting skippie I've ever had and I would rate that method over anything I've tasted using snapper...

By the way, my 2c is it's a crap bait.  Skin falls off, not oily enough and good for couta.  Albacore is much better!

Cut it into chunks and put it on a ledger rig, it magically converts into gurnard fillets. I smoked one once, it wasn't flash but there's enough good eating posts here to suggest otherwise.
