Remove the flesh from the shells and wash, cut off the pewa and discard the teeth.
Heat a heavy fry pan and place the fish in along with a little wine.
Cover each paua with its shell so that it steams inside the shell.
When they are cooked, put a knob of butter on and a little pepper and salt.
Serve with mashed potatoes or between two thick chunks of crusty bread.
