Italian tomato snapper & beans

4x snapper fillets

1x tbsp Olivado lemon infused Avocado oil
1x finely chopped onion
1x tsp Masterfoods crushed garlic
400grm Italian crushed tomato
Zest 1x lemon
1/3 cup dry white wine
1/3 cup caper berries
1/3 cup coriander chopped
Salt and pepper


Method

Heat the oil in a pan add onion and garlic, sauté without colour.
Add wine, lemon zest, tomatoes and simmer until thickened, add caper berries, season to taste. Set aside.
Dust fillets with flour and cook until flakey add coriander to sauce then erve over the fillets, garnish with coriander.
