Advice & Info: Thai Hot and Sour Prawn Soup for 2 people |

4 cups chicken stock
5 red chillies
5 one inch pieces of chopped lemon
grass
6 thin slices galangal
6 kaffir lime leaves
½ teaspoon salt
1
tablespoon soya sauce
1 tablespoon lime/lemon juice
2 teaspoon hot and
sour soup mix
18 peeled, cooked prawns
1 tablespoon spring onion and
coriander leaves
1 cup of sliced mushroom
Method
Heat the stock over a medium heat, add galangal, lemon grass, chilli, kaffir lime leaves, salt, soya sauce, hot and sour mix. Bring to boil.
Add prawns, mushrooms and reboil. Add lime/lemon juice. Stir and serve.
Sprinkle with spring onion and coriander.
